Today I’m going to share with you my most favorite salad recipe- the Rainbow Salad.
It’s a low-carb recipe full of nutrition and protein loaded. I make it all the time as my lunch at work through the week.
Here’s the recipe:
– 2 cups of Spinach
– ½ cup of sliced cucumbers
– ½ cup of chopped small bell peppers (I like to mix with red, yellow and orange color)
– 1/4 cup of blueberries
– 1/4 cup of raspberries
– 1/4 cup of blackberries
– 1/2 cup of diced grilled chicken
– ½ tbsp of balsamic vinaigrette (check out this organic paleo approved balsamic vinaigrette)
Total calories: 276
Total protein: 21g
Total carbs: 9g
You can always add in more chicken and reduce the amount of berries. It’s totally up to you.
I don’t care about adding cheese into my salad. If you are looking for more protein, definitely add cheese into it. 😊
